Red Rock Cola Chocolate Cake

Ingredients
Cake:

1 3/4 cups all-purpose flour

3/4 cup unsweetened cocoa powder

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1/2 tsp salt

1 cup Red Rock Premium Cola
-
1/2 cup unsalted butter, melted and cooled
-
1 1/2 cups granulated sugar
-
2 large eggs
-
1 tsp vanilla extract
-
3/4 cup buttermilk
Chocolate Cola Frosting:
-
1/2 cup unsalted butter, softened
-
1/4 cup Red Rock Premium Cola
-
1/4 cup unsweetened cocoa powder
-
3 cups powdered sugar
-
1 tsp vanilla extract
-
Pinch of salt
Instructions
1. Preheat and Prep
-
Preheat your oven to 350°F (175°C).

Grease and flour two 9-inch round cake pans.
2. Make the Cake Batter
-
In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

In a large bowl, whisk together the Red Rock Premium Cola, melted butter, and granulated sugar until well combined.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
3. Bake the Cake

Divide the batter evenly between the prepared cake pans.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
4. Prepare the Chocolate Cola Frosting

In a large bowl, beat the softened butter until smooth and creamy.

Gradually add the Red Rock Premium Cola and cocoa powder, beating until well combined.

Add the powdered sugar, one cup at a time, beating well after each addition.

Beat in the vanilla extract and a pinch of salt until smooth and fluffy.
5. Frost and Assemble Cake

Place one cake layer on a serving plate or cake stand.

Spread a layer of frosting evenly over the top.

Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
