Red Rock Premium Cola Chocolate Cake

Indulge in the rich flavors of chocolate and
Red Rock Premium Cola with this rich and delicious cake. Perfect for any occasion!

Ingredients

Cake:​

  • 1 3/4 cups all-purpose flour

  • 3/4 cup unsweetened cocoa powder

  • 1 1/2 tsp baking powder

  • 1 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 cup Red Rock Premium Cola

  • 1/2 cup unsalted butter, melted and cooled

  • 1 1/2 cups granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 3/4 cup buttermilk

Chocolate Cola Frosting:

  • 1/2 cup unsalted butter, softened

  • 1/4 cup Red Rock Premium Cola

  • 1/4 cup unsweetened cocoa powder

  • 3 cups powdered sugar

  • 1 tsp vanilla extract

  • Pinch of salt

Instructions

1. Preheat and Prep

  • Preheat your oven to 350°F (175°C).

  • Grease and flour two 9-inch round cake pans.

2. Make the Cake Batter

  • In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

  • In a large bowl, whisk together the Red Rock Premium Cola, melted butter, and granulated sugar until well combined.

  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.

3. Bake the Cake

  • Divide the batter evenly between the prepared cake pans.

  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  • Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

4. Prepare the Chocolate Cola Frosting

  • In a large bowl, beat the softened butter until smooth and creamy.

  • Gradually add the Red Rock Premium Cola and cocoa powder, beating until well combined.

  • Add the powdered sugar, one cup at a time, beating well after each addition.

  • Beat in the vanilla extract and a pinch of salt until smooth and fluffy.

5. Frost and Assemble Cake

  • Place one cake layer on a serving plate or cake stand.

  • Spread a layer of frosting evenly over the top.

  • Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
