Red Rock Peach Cobbler

Ingredients
Filling:​

6 fresh peaches, peeled, pitted, and sliced

1 cup Red Rock Peach soda

1 cup granulated sugar

1/2 cup light brown sugar

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1 tbsp lemon juice
-
2 tbsp cornstarch
Topping:​

1 cup all-purpose flour
-
1 cup granulated sugar
-
1 tsp baking powder
-
1/2 tsp salt
-
1 cup milk
-
1/2 cup unsalted butter, melted
Instructions
1. Prepare the Filling:

Preheat your oven to 350°F (175°C).

In a large saucepan, combine the peaches, Red Rock Peach soda, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg, and lemon juice.

Cook over medium heat, stirring occasionally, until the mixture starts to simmer.

In a small bowl, mix the cornstarch with a little bit of the hot peach mixture to create a slurry. Then, stir the slurry back into the peach mixture.

Continue to cook for another 2-3 minutes, until the filling thickens slightly.

Remove from heat and set aside.
2. Prepare the Topping:

In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt.

Add the milk and melted butter, stirring until just combined.
3. Assemble the Cobbler:

Pour the peach filling into a 9x13-inch baking dish.

Pour the batter over the peach filling, spreading it out evenly.
4. Bake:

Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and cooked through.
5. Serve:

Allow the cobbler to cool slightly before serving.
